Cooking Classes
Cooking classes are currently being offered in person in The Eugene area. I have knowledge for home cooks or any professionals trying to elevate their own cooking. I have online modules that are published and free to use. However the part of cooking that stems from creativity is easiest taught on the personal level.
At $20 per class this is a pretty good deal. Each class involves an assortment of ingredients that you want to work with. Or they can be provided, comped back to me at cost with a receipt present. You also get to eat the finished project. Whether it is your dinner or a lasagna to get you through the week.
With differences on how to work with anything from a stone griddle, to a cast iron pan. All classes will be taught based on what is available for you to use in your own kitchen. I can travel or I can host as well. If I am hosting please be aware of my rescue dog and overgrown puppy! They love new people.
Restaurant consultations
I am currently offering consultations throughout the Lane county area. Possibly further if we can negotiate travel expenses. I can offer online and over the phone consultations for those at a distance. Pricing may vary depending on circumstances and the amount of direct work I will be performing. Cooking however is flat rated at $22/hr.
I immerse myself into the restaurant and the surrounding culture. This allows me to pinpoint where any issues are coming from and where others may come about. I specialize in restaurant and kitchen logistics, problem solving, and conflict resolution skills. Additionally I can help to rebuild any damaged P.R.
With the ever building momentum behind my book. I hope to have published a mini series to help individual job roles to bring out the best in themselves on and off the clock.
My deep understanding of restaurant culture has lead to some pretty unpleasant realizations about how the industry operates. However time has ultimately proven that the key to success is happy employees. That will be the end result of investing in my services to build you a respect driven business model.

Good food done right. Simple enough in concept though often lost in practice. Done right can mean the recipe was followed. Done right could mean the steak is cooked to the right temperature. Done right could even mean cut from a pouch and reheated so a chain can maintain consistency.
To my wife and I done right means so much more. Done right starts with transparency. From every ingredient chosen we believe in freshness and quality. Transparency is having the right to know exactly what is on your plate. Done right is simple, we will not cut the corners. Including an octagon.
I hope to open my own establishment here in Springfield, Oregon. I believe in the people around me and ultimately, I cook for you. Not myself, nor my ego. At the end of the day handing leftovers out my back door makes me happy. Everybody has a stomach, and they all speak a universal language. The comfort of food.
My mission is to operate locally to support the farming community. From in house butchery, to biscuits and gravy my promise is simple. I do not serve food that I would not want to eat. This promise has nothing to do with flavor, or texture. This promise means that my ethics will not allow me to serve food that I know there is something wrong with. This promise means fresh in house or local operations only. Nothing processed. Transparency is our model.
As we seek to build our business and grow within the community any support and encouragement is greatly appreciated. This includes any motivating kind words of anticipation as building from the ground up is never easy.
